Um projeto inovador e de sucesso est\u00e1 sendo desenvolvido em Mato Grosso h\u00e1 alguns anos. Trata-se da Celeiro Carnes Especiais, que iniciou suas atividades oficialmente como Est\u00e2ncia Celeiro, em meados de 2007, por iniciativa do pecuarista Marco T\u00falio Duarte Soares, atual presidente da Associa\u00e7\u00e3o de Criadores de Mato Grosso (Acrimat).<\/p>\n

Inicialmente, o projeto visava dar vaz\u00e3o \u00e0 produ\u00e7\u00e3o de cordeiros de sua propriedade em Pedra Preta, que anteriormente atendia sob sistema de encomendas, a um grupo de amigos e alguns restaurantes de Rondon\u00f3polis. Hoje, o projeto est\u00e1 voltado para o consumidor que quer um produto diferenciado. \u201cJ\u00e1 nascemos com este objetivo de atender nichos de mercado, nosso objetivo nunca foi ser o maior, mas sim o melhor em termos de novos cortes e com um produto diferenciado\u201d.<\/p>\n

O empres\u00e1rio diz ainda que a Est\u00e2ncia Celeiro nasceu para inovar com excel\u00eancia e abriu o mercado com cortes especiais de cordeiro, cuidando desde a sele\u00e7\u00e3o dos animais, observando idade, sanidade e gen\u00e9tica, at\u00e9 a apresenta\u00e7\u00e3o final e embalagem de todos os produtos. Em 2010, j\u00e1 com Sise (Servi\u00e7o de Inspe\u00e7\u00e3o Estadual), iniciou a produ\u00e7\u00e3o de carnes bovinas, seguindo o mesmo padr\u00e3o de qualidade. Assim, foi lan\u00e7ada a primeira linha de carnes bovinas, chamada Euro, trazendo uma sele\u00e7\u00e3o de mais de 20 cortes de linhagem europeia (Angus e Hereford), com garantia e certifica\u00e7\u00e3o de origem.<\/p>\n

J\u00e1 em 2011, foi lan\u00e7ada a linha Am\u00e9rica proveniente do abate de f\u00eameas precoces da ra\u00e7a Nelore e demais ra\u00e7as zebu\u00ednas. \u201cHoje, trabalhamos com abate de f\u00eameas precoces. Explicando um pouco melhor como funciona: um pecuarista que produz, por exemplo, dois mil bezerros por ano, geralmente tem 50% de machos e a outra metade f\u00eameas. Dessas, de 20% a 30% n\u00e3o atingem o n\u00edvel esperado de prenhez e acabam tendo que ser utilizadas para a reposi\u00e7\u00e3o, s\u00e3o essas as f\u00eameas precoces que adquirimos. Por\u00e9m, com o diferencial de pagarmos um melhor pre\u00e7o para este produtor\u201d, detalha.<\/p>\n

Marco Tulio diz ainda que os grandes frigor\u00edficos, nos \u00faltimos anos tamb\u00e9m est\u00e3o se atentando ao trabalho com cortes diferenciados e animais precoces, o que ele j\u00e1 faz h\u00e1 10 anos. \u201cAl\u00e9m das grandes ind\u00fastrias, tamb\u00e9m surgiram outras empresas trabalhando com o mesmo modelo, mas isso \u00e9 bom para o mercado e para os consumidores\u201d, avalia o empres\u00e1rio.<\/p>\n

Conforme F\u00e1bio da Silva, gerente de projetos da Acrimat, j\u00e1 faz alguns anos que a entidade trabalha junto aos criadores nessa quest\u00e3o da qualidade da carne. \u201cTrata-se de uma tend\u00eancia mundial. Hoje, os consumidores v\u00e3o \u00e0s g\u00f4ndolas dos supermercados e quando pegam os cortes de carnes, querem saber se est\u00e1 especificado a origem do animal, se foi criado a pasto ou confinado, entre outras informa\u00e7\u00f5es. Em fun\u00e7\u00e3o disso, temos que estar atentos, pois muitos pa\u00edses sa\u00edram na frente nessas quest\u00f5es e temos que nos adequar o mais r\u00e1pido poss\u00edvel\u201d.<\/p>\n
